This mushroom toast recipe is an amazing mid-day snack. It is packed full of healthy fats and carbs, fiber, and antioxidants! The recipe is also 100% vegan and plant-based.
2slicesEzekiel 4:9 Sesame Sprouted Whole Grain Bread (see notes)
Walnut Pesto Spread
½cupwalnuts
¼cupnutritional yeast
2tbspolive oil
½lemon (juiced)
1clovegarlic
Salt and pepper (to taste)
Instructions
For The Walnut Pesto Spread
Blend all ingredients in a food processor. Leave the spread slightly chunky.
For The Mushroom Toast
Heat up a pan over medium heat. Let it heat up for 3-5 minutes.
Add the sliced mushrooms to the pan (no oil). Mushrooms have a ton of water in them, so they will not stick to the pan.
Let the mushrooms cook for 5-7 minutes, or until slightly browned. Add the red pepper flakes and salt-free seasoning. Cook for an additional minute or so.
As the mushrooms are cooking, toast the bread to your liking.
Spread a generous amount of walnut pesto onto each piece of toast. Top with mushrooms. Enjoy!
