MUSHROOM TOAST & WALNUT PESTO SPREAD (VEGAN)

This mushroom toast recipe is an amazing mid-day snack. It is packed full of healthy fats and carbs, fiber, and antioxidants! The recipe is also 100% vegan and plant-based.

Ingredients
  

Mushroom Toast

  • ½ cup cup white mushrooms (sliced)
  • ¼ tsp red pepper flakes
  • ½ tsp Table Tasty Salt-Free Seasoning (see notes)
  • 2 slices Ezekiel 4:9 Sesame Sprouted Whole Grain Bread (see notes)

Walnut Pesto Spread

  • ½ cup walnuts
  • ¼ cup nutritional yeast
  • 2 tbsp olive oil
  • ½ lemon (juiced)
  • 1 clove garlic
  • Salt and pepper (to taste)

Instructions
 

For The Walnut Pesto Spread

  • Blend all ingredients in a food processor. Leave the spread slightly chunky.

For The Mushroom Toast

  • Heat up a pan over medium heat. Let it heat up for 3-5 minutes.
  • Add the sliced mushrooms to the pan (no oil). Mushrooms have a ton of water in them, so they will not stick to the pan.
  • Let the mushrooms cook for 5-7 minutes, or until slightly browned. Add the red pepper flakes and salt-free seasoning. Cook for an additional minute or so.
  • As the mushrooms are cooking, toast the bread to your liking.
  • Spread a generous amount of walnut pesto onto each piece of toast. Top with mushrooms. Enjoy!

Notes

Table Tasty Salt-Free Seasoning is a great alternative to salt. I put it on almost everything!
 
Ezekiel is an amazing whole grain bread. It does not contain added sugar or preservatives. For best results, keep the bread frozen.
